Cranberry Christmas Cake

This cake is delicious!  Grace thought it would be good with some orange zest!


Ingredients

3 eggs

2 cups of sugar

3/4 cup of butter, softened

1 teaspoon vanilla (or a little more)

2 cups all purpose flour

12 oz fresh cranberries

Instructions

1. Preheat oven to 350.  With a mixer beat the eggs and sugar until slightly thickened and light in color, about 5 to 7 mins.  The mixture should almost double in size.  The mixture should form a ribbon when you lift the beaters out.

2.  Add butter and vanilla.  Mix two more minutes.  Stir in flour until just combined.  Add cranberries and stir to mix thorough out.

3.  Spread in a buttered 9x13 pan.  Bake for 40 to 50 minutes.
