Piadini


I have a favorite menu item at a restaurant close to work (but that I never go to anymore because of the free food) - it is called a caprese piadini.  Basically it is a flat bread with roasted tomatoes, fresh mozerella and romaine lettuce leaves with balsamic dressing sprinkled over the top.  Something got me thinking about them over the weekend and I decided I could recreate them. 

The above pic is the result.  They turned out amazing!  Just fold in half and eat!
