Ube Scones

I took a cooking class yesterday at work put on by the Filipino club.  One of our employees mom is a baker and she taught us how to make ube scones.  
Ube is a purple yam from the Philippines and is all the range right now.  The taste if very mild and was described as the Filipino vanilla.

We used dried ube and ube extract which was mixed with the whipping cream (pic above) to give the dough the purple color.  The dried ube was more for taste.

The recipe had a whole stick of butter and over a cup of whipping cream!  Not low fat.
